Elizabeth launched her journalism career at the KAUN station based in Sioux Falls. Afterward, she went to work with NBC affiliate, KNBN in Rapid City, South Dakota where she anchored for the evening news up from December 2002 until May 2004.
Hopkins later joined ABC affiliate, WKOW from April 2004 until June 2007 where she served as a reporter and as an anchor. Elizabeth was nominated for the Emmy Awards courtesy of her report titled Bug Chasing, a word that related to those people who were in the quest for HIV infection.
